Overview
The osteria draws its name from Castel Gavone, also known as the Castello dei Del Carretto, a medieval stronghold erected by the Marquisate of Finale on a rocky spur dominating the Aquila valley. The castle’s distinctive Torre dei Diamanti (Diamond Tower), with its rusticated diamond-cut stonework dating to the late 15th century, is one of the most photographed monuments of inland Liguria. Finalborgo, the nearby walled village, is considered one of Italy’s most beautiful borghi and is listed among the Borghi più belli d’Italia.
History
Castel Gavone was built around 1385 by the Del Carretto family, who ruled the independent Marquisate of Finale until its annexation by the Republic of Genoa in 1598, after which it passed to Spain and eventually to Savoy. The castle was partially demolished after the Genoese conquest and further reduced by French troops in the 18th century, leaving the evocative ruins visible today. Finalborgo itself was founded in the 13th century as the administrative capital of the marquisate and preserves its walls, the Castel San Giovanni above, the collegiate church of San Biagio and the Museo Civico del Finale.

Castel Gavone’s Torre dei Diamanti, the only surviving tower of the castle, rises above the vegetation with its unusual diamond-cut stone surface — a northern European architectural motif rare on the Italian Riviera. The valley below leads to Finalborgo’s intact medieval walls and the baroque churches within.
Cultural significance
The Marquisate of Finale was one of the last independent feudal states on the Ligurian coast, and Castel Gavone is its most visible material legacy. The restaurant’s position in this landscape places it in direct dialogue with centuries of rural Ligurian life — the olive groves, the dry-stone walls and the caruggi of Finalborgo — making it an authentic point of encounter with the hinterland heritage of the Riviera di Ponente.

Getting there
Finale Ligure is served by a railway station on the Genoa–Ventimiglia coastal line. By car, exit the A10 motorway at Finale Ligure and follow signs towards Finalborgo and Perti (approximately 5–8 km inland). Local buses connect Finale Ligure railway station with Finalborgo; the Perti locality is best reached by car or bicycle.
