La Trota Restaurant
La Trota is a celebrated two-Michelin-star restaurant in Rivodutri, a small village in the Rieti province of northern Lazio, set along the banks of the Peschiera springs at the foot of the Reatine Apennines. Run by brothers Sandro and Maurizio Serva, the restaurant has become internationally known for its exceptional freshwater fish cookery — particularly trout and crayfish from the local spring-fed waters — presented through a refined contemporary lens that has earned it a place among Italy’s most distinctive destination restaurants.

Overview
Rivodutri sits in a quiet valley approximately 8 km north of Rieti, near the Peschiera springs — one of the most significant freshwater sources in central Italy, feeding both the Velino river system and the aqueducts supplying Rome. The landscape is characteristic of the Reatine highlands: beech forest, limestone outcrops, spring-fed streams of exceptional clarity. La Trota’s entire culinary identity is built on this hydrology: the trout, crayfish, perch, and tench that populate these waters define the menu and give the restaurant its name.
History
The Serva family’s association with Rivodutri’s freshwater tradition predates the restaurant’s fine dining incarnation: the area’s trout fisheries and simple trout taverns were a feature of the Reatine hinterland long before Michelin recognition. Brothers Sandro and Maurizio transformed the family osteria over decades of progressive refinement, developing techniques for freshwater fish that drew on classical and contemporary Italian cooking while refusing to abandon the ingredient specificity of the territory. Recognition from the Michelin Guide placed La Trota firmly on the map of Italian gastronomic pilgrimage destinations.
What you see
The restaurant occupies a building integrated into the spring-side landscape of Rivodutri, with terraces overlooking the crystalline water channels that define the local scenery. The interior is warm and intimate, with wooden furnishings and nature-influenced decorative elements that reinforce the connection to the surrounding environment. The menu changes seasonally and is structured around the freshwater catch, with vegetable, cheese, and meat components sourced from the broader Reatine territory to complement the fish courses.
Cultural significance
La Trota is one of very few two-Michelin-star restaurants in the whole of Lazio outside Rome, making it a benchmark for understanding how Italian fine dining can be rooted in hyper-local ecological conditions rather than urban prestige. The restaurant has also helped draw attention to the Reatine Apennines as a heritage and gastronomic destination — a mountainous territory historically overshadowed by Rome yet rich in Sabine archaeological sites, medieval abbeys, and exceptional natural landscapes including the Marmore Falls nearby.
