Sottosale Restaurant

Sottosale is a restaurant set within the San Pietro Palace Hotel in the Finalmarina district of Finale Ligure, on the Ligurian Riviera di Ponente. The name — Italian for “below the salt” or “under salt” — evokes the deep Ligurian seafaring and salt-trade heritage of this stretch of coast between Genoa and the French border, a coastline whose culture and gastronomy have been shaped for centuries by the sea.

Overview

Finalmarina is the seaside district of Finale Ligure, the coastal municipality of approximately 11,000 inhabitants in the province of Savona. The town is divided into three historic nuclei — Finalmarina on the sea, Finalborgo inland and Finalpia to the east — each with a distinct character. Finalmarina’s seafront promenade, the medieval church of San Giovanni Battista and the natural arch of the Caprazoppa headland define this stretch of the Riviera, where the restaurant Sottosale draws on a tradition of Ligurian maritime cooking that includes fresh fish, seafood pasta, pesto and focaccia.

History

Finale Ligure has been inhabited since the Palaeolithic — human remains found in the Arene Candide cave near Finale are among the most important prehistoric finds in Italy, including the famous “Young Prince” burial dating to around 23,000 BCE. The area was successively under Roman, Byzantine, Genoese and Spanish rule before becoming part of the Savoyard state in 1713. The 19th-century development of seaside tourism along the Ligurian Riviera transformed Finalmarina into a resort destination whose belle époque architecture survives along the waterfront.

What you see

The San Pietro area of Finalmarina is elevated above the seafront, affording views across the bay towards the limestone cliffs and sea stacks of the Ligurian coast. The district preserves 19th- and early 20th-century villas and hotels characteristic of the Riviera’s first tourist era, set among Mediterranean gardens of palms, agaves and maritime pines. The coastline below the hotel is typical of the Finale stretch, with small pebble beaches alternating with rocky headlands.

Cultural significance

Finale Ligure occupies a position of cultural importance both for its exceptional prehistoric heritage — the Arene Candide cave alone contains stratified deposits spanning 30,000 years — and for its medieval townscape of Finalborgo, one of the most intact walled villages in Liguria. Dining along this coast means participating in a culinary tradition that blends Alpine ingredients from the hinterland with the freshest catch from the Ligurian Sea.
