Glam Restaurant
Glam is a haute-cuisine restaurant located inside the Palazzo Venart hotel in Venice, a historic palace facing the Grand Canal. Overseen by chef Enrico Bartolini, one of Italy’s most decorated culinary figures, Glam holds two Michelin stars and offers a menu rooted in Italian tradition refined through contemporary technique. Dining here is inseparable from the setting: frescoed ceilings, Murano glass chandeliers, and canal views compose an experience as visual as it is gastronomic.

Overview
Glam occupies the ground-floor dining rooms of Palazzo Venart, a 15th-century Venetian palace converted into a luxury hotel. The restaurant earned its first Michelin star shortly after opening and has maintained two stars, placing it among the most acclaimed tables in the Veneto. Chef Enrico Bartolini, who has accumulated more Michelin stars than any other Italian chef, oversees the culinary direction while a resident team executes the daily service.
History
Palazzo Venart was built in the 15th century and passed through several noble families before falling into disuse in the 20th century. After an extensive restoration, it reopened as a boutique hotel and Glam opened with it, conceived as a destination restaurant matching Venice’s singular cultural prestige. The collaboration with Bartolini, who built his reputation at Mudec in Milan, brought immediate critical attention to the project. Within a few years of opening, Glam had established itself as a reference point for fine dining in northeastern Italy.
What you see
The dining room retains original Venetian architectural features: frescoed vaulted ceilings, terrazzo floors, and tall windows opening onto a garden and canal. Tables are dressed with fine linen and Venetian glassware, and the room is small enough to feel intimate. In warmer months a garden terrace extends the service outdoors, bordered by century-old trees and canal water. The kitchen sends out tasting menus of five to eight courses, each dish conceived as a visual and textural composition built from Italian regional ingredients.
Cultural significance
Venice has historically been a city more of spectacle than of gastronomy, and Glam represents a deliberate repositioning of the city’s dining identity alongside its artistic heritage. By anchoring a two-Michelin-star kitchen inside a preserved Renaissance palace, Glam argues that the craft of the table belongs in the same conversation as Venetian painting and architecture. It draws an international clientele that travels specifically to eat, extending the economic and cultural reach of heritage tourism beyond museums and gondolas.
