Overview

Baita dei Pini is located in Bormio, one of the principal mountain resorts in the Italian Alps, situated at approximately 1,225 metres above sea level near the entrance to Stelvio National Park. The restaurant serves both hotel guests and outside visitors, offering a menu centred on the culinary traditions of the Valtellina, the long Alpine valley stretching from Lake Como to the Swiss border. The kitchen’s approach emphasises seasonal, locally sourced produce prepared according to time-honoured mountain recipes.

History

Bormio has drawn visitors seeking thermal baths, mountain passes, and alpine scenery since Roman times; its Bagni di Bormio thermal complex is documented in medieval sources and still operates today. The hotel and restaurant tradition in Bormio evolved with the growth of Alpine tourism in the 19th and 20th centuries, maturing into a well-established hospitality culture centred on mountain sports, wellness, and traditional gastronomy. Baita dei Pini is part of this tradition, combining the rustic warmth of the Alpine baita (mountain hut) aesthetic with contemporary comfort and consistent culinary quality.

What you see

The restaurant occupies a warm, wood-panelled dining room in keeping with the chalet-style architecture of the hotel, with an atmosphere characteristic of the Valtellina mountain hospitality tradition. The kitchen produces dishes such as Pizzoccheri — buckwheat pasta with Valtellina Casera cheese, potatoes, and greens — and Sciatt, crispy buckwheat fritters filled with cheese, which are canonical expressions of local culinary identity. The wine list features Valtellina Superiore and Sforzato DOCG wines, produced from Nebbiolo grown on the steep terraced slopes above the valley floor.

Cultural significance

Valtellina’s cuisine is recognised as one of Italy’s most distinctive mountain food traditions, shaped by centuries of transhumance, terraced viticulture, and Alpine self-sufficiency. Restaurants like Baita dei Pini maintain the living practice of preparing these dishes from local ingredients, offering visitors a direct experience of a culinary heritage that extends far beyond tourist convention into the daily life of the valley’s communities.
