Bacaro Risorto

Bacaro Risorto — “the Risen Bacaro” — is a traditional Venetian wine bar in the heart of Venice, where the centuries-old ritual of the ombra (a small glass of wine) and cicchetti (bite-sized snacks) continues to anchor neighbourhood life. Part of Venice’s living bacaro culture, it embodies the straightforward, convivial spirit that has defined Venetian eating and drinking habits since the days of the Republic.

Overview

Bacaro Risorto takes its evocative name — “Risen” or “Revived” — from the idea of rebirth, a fitting metaphor for a drinking culture that has endured political upheaval, flooding, mass tourism, and economic pressure while remaining rooted in Venetian daily life. Like all authentic bacari, it prioritises the social act of sharing wine and food over ceremony, offering a counter display of rotating cicchetti and a short wine list focused on Veneto and Friuli producers. The atmosphere is unpretentious and lively, encouraging the kind of unhurried conversation that characterises the traditional giro de ombre.

History

The word “bacaro” has been in use in Venice since at least the 17th century, though wine taverns serving the dockworkers, gondoliers, and market traders of the Rialto predate written records by centuries. The Republic of Venice was one of the most sophisticated wine markets in medieval Europe, importing and redistributing wines from across the Mediterranean and beyond. The cicchetti tradition evolved from these market-side snack counters — inexpensive preparations that working people could eat standing up between tasks. Establishments like Bacaro Risorto continue this lineage, adapting the menu to modern tastes while preserving the essential format of the experience.

What you see

The interior follows the classic bacaro formula: a narrow, wood-panelled room with a counter running most of its length, displaying small plates of cicchetti. Standard offerings include polpette (fried meat or fish balls), tramezzini (crustless sandwiches), crostini with toppings ranging from baccalà mantecato to speck and cheese, and the ubiquitous sarde in saor — sardines marinated in a sweet-and-sour onion sauce that originated as a preservation method on Venetian fishing boats. Wine is served in the traditional small ombra glass, allowing customers to try several different wines during a single visit.

Cultural significance

The bacaro circuit is recognised as a core element of Venetian intangible cultural heritage, binding the historic centre’s residents — a dwindling population — around shared social rituals. The giro de ombre (bar crawl between bacari) is a practice that appears in Venetian literature from the 18th century onward and remains a lived tradition today. Bacari like Risorto play an important documentary role, preserving recipes — such as saor, bigoli in salsa, and baccalà mantecato — that trace the Republic’s medieval trade routes in the flavours of their ingredients.
