In 1916, amid the severe material shortages of the First World War, fourteen-year-old Domenico Cocco entered as an apprentice in an ancient artisanal pasta mill in Fara San Martino, initiating a centenary culinary dynasty rooted in the Maiella mountain gorges.

The Water of the River Verde and Bronze Dies

The mountain village of Fara San Martino in Abruzzo possessed an unparalleled natural advantage for pasta manufacturing: the crystal-clear, mineral-balanced spring water of the River Verde emerging directly from limestone caverns, combined with the dry mountain breeze funneled through the rocky canyons. Under the strict tutelage of veteran master pastai, Domenico mastered the art of judging dough elasticity by hand, regulating coarse durum wheat semolina hydration, and utilizing heavy bronze dies that imparted a distinctively porous, rough surface texture essential for holding sauces.

Artisanal Tradition and Twentieth-Century Prestige

Following decades of technical mastery, Domenico’s knowledge was formalized and expanded by his son, Cavaliere Giuseppe Cocco, who established the family’s dedicated manufacturing facilities. Resisting modern industrial shortcuts, the Cocco family preserved vintage mechanical presses and historic static drying chambers where pasta rested at low temperatures for up to sixty hours. This uncompromising dedication elevated Pastificio Cav. Giuseppe Cocco into an international gastronomic benchmark, celebrated in Michelin-starred restaurants and specialty gourmet institutions worldwide.

Today, the production facility continues to operate along the banks of the Verde stream in Fara San Martino, retaining its artisanal dimensions within the Maiella National Park while safeguarding historic milling archives and traditional pasta-making equipment.
