Overview
Trattoria Paolino is on Piazza Cavour, the arcaded market square of Vercelli, in Piedmont. The archive entry describes a small room, checked tablecloths and wooden furniture, and a kitchen that works in the Piedmontese tradition.
History
The trattoria took part in the third series of 4 Ristoranti, broadcast in 2016-17, in the eighth episode: the contest for the best rice restaurant of the triangolo del riso, against Acquamatta, Tenuta Camillo and Il Bianco e l’Augusto. Trattoria Paolino won the episode.
The programme 4 Ristoranti, led by the chef Alessandro Borghese, sets four restaurants of the same area against one another; each host eats at the others and marks them.
What you see
Vercelli stands at the centre of the rice triangle of Piedmont and Lombardy, and the flooded paddies that surround it in spring are the reason the episode was set here.
