History & The Rosa Salva Dynasty
The company traces its roots back to 1879, when Andrea Rosa began working as an itinerant master chef and banquet caterer. His exceptional skill and ability to salvage kitchen crises earned him the honorary moniker Salva (“he who saves”). He went on to cater high-society banquets in patrician Venetian palazzi, including receptions for the Italian royal family and European aristocracy.
Over the decades, the family transitioned from private catering to establishing permanent pastry shops and espresso bars throughout the city. The Campo Santi Giovanni e Paolo location became their spiritual home: a timeless meeting place where Venetian culinary tradition has been preserved through six generations of the Rosa Salva family.
What you see & taste
The shopfront is divided into traditional sections: the main bakery counter displaying rows of golden bussolài buranelli, cornmeal zaeti, delicate puff pastries, and fruit tarts, alongside a dedicated Gelateria Bar with an authentic white marble counter serving seasonal gelati and granitas.
During the Venice Carnival, Rosa Salva is renowned for producing some of the city’s finest frittelle veneziane—fluffy fried dough fritters dusted with sugar and studded with pine nuts and raisins, or filled with rich zabaione and pastry cream. On sunny afternoons, the outdoor café tables set on the square provide an unmatched vantage point to contemplate Verrocchio’s Colleoni statue and the canal of Rio dei Mendicanti.

Getting there
From the Ospedale vaporetto stop (Lines 4.1, 4.2, 5.1, 5.2), walk south down Fondamenta dei Mendicanti straight into Campo Santi Giovanni e Paolo (approx. 3 minutes). The café is located on the southern flank of the square.
