Overview

The Antica Macelleria Sorcinelli is at Acqualagna, in the Province of Pesaro e Urbino, in the Marche. It is run by Alessandro Foglietta, known as el Foia, a butcher by vocation and a traditionalist by temperament.

The shop grew into a small restaurant: in the room next door the customer chooses the cut of meat or the cured meats and eats them there, in front of the hearth on which the meat is cooked.

History

The house sets out its policy plainly in the archive entry: high quality of product and careful sourcing of raw materials, in the tradition of the Marche.

The osteria took part in the fourth series of 4 Ristoranti, broadcast in 2018, in the seventh episode: the contest for the best truffle restaurant of Acqualagna, against Osteria da Doddo, Enosteria and Gioconda. The episode was won by Gioconda.

The programme 4 Ristoranti, led by the chef Alessandro Borghese, sets four restaurants of the same area against one another; each host eats at the others and marks them.

What you see

Acqualagna, at the mouth of the Furlo gorge, is one of the capitals of the Italian truffle trade, and holds its fair each autumn: that is why the episode was set here.
