La Pergola occupies the ninth floor of the Rome Cavalieri, a Waldorf Astoria hotel set on the wooded ridge of Monte Mario on the northwestern edge of Rome. Heinz Beck, born in Baden-Württemberg, arrived in Rome in 1994 and has led the kitchen for over three decades, developing a cuisine that is simultaneously rooted in Mediterranean ingredients and informed by a scientific interest in nutrition and digestion. The dining room seats around sixty guests and is finished with Murano glass, hand-woven carpets and a terrace from which St Peter’s Basilica and the Tiber valley are clearly visible.

History

The Rome Cavalieri hotel opened in 1963 and La Pergola became its flagship restaurant, but it was with the arrival of Heinz Beck in 1994 that the kitchen reached the highest level of international recognition. The first Michelin star followed in 1996, the second in 2000 and the third in 2005. Beck’s collaboration with nutritionists and scientists led him to develop dishes that are light by the standards of haute cuisine — a philosophy he has articulated through books and lectures — without sacrificing depth of flavour or the pleasure of the table. Over three decades, La Pergola has helped train a generation of Italian chefs who have gone on to open acclaimed restaurants across Europe.

Monte Mario is in northwest Rome, approximately 5 km from the city centre. By taxi or car from Roma Termini station, the journey takes 20–30 minutes depending on traffic. The Rome Cavalieri provides a complimentary shuttle service from central Rome for dinner guests; details are available when booking. The nearest Metro station is Ottaviano (Line A), from which the hotel is a 20-minute walk uphill or a short taxi ride. The nearest airport is Rome Fiumicino (FCO), about 30 km to the southwest via the A91 motorway.
